Saccharomyces cerevisiae IR-2 is an industrial yeast strain obtained from fermented food in 1985. In order to promote its practical application, we have succeeded in separating isogenic strain pairs from the IR-2 diploid strain by iterative inbreeding with deletion of a homothalism gene HO.
